Ricotta as promised

I can't believe it's been five months since I last posted something! Shocking. In any event, I recently promised a friend/chef that I would post a link on my blog to the ricotta cheese recipe I favor. I went through a soft cheese-making phase a while back and through experimentation, learned that buttermilk is the key ingredient to making delicious, savory home-made ricotta. There are many recipes that don't call for buttermilk but this one with buttermilk is the best I've found. The recipe is here. Super easy, takes about an hour, delicious with a balsamic/olive oil drizzle. Now if someone has a good home-made paneer recipe, I'd sure appreciate a link. Thanks!

I have to try this! I made a batch of what was termed "cream cheese", basically ricotta mixed with whipping cream. My recipe called for adding vinegar to the milk, but I like this one better. wish me luck.
